Prepare the Sauerkraut
Drain the sauerkraut thoroughly and set aside.

Prepare the Ingredients
Slice the dark rye bread if it's not pre-sliced. Gather the corned beef, Swiss cheese, and butter.
Assembly

Layer the Filling
On two slices of dark rye bread, layer 4 oz of corned beef, 1 cup of sauerkraut, and 2 slices of Swiss cheese.

Top with Bread
Place the other two slices of dark rye bread on top to form two sandwiches.
Cooking

Grill the Sandwiches
Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, place one sandwich in the skillet. Grill for about 3-4 minutes until the bread is golden brown and the cheese begins to melt.

Flip and Finish
Spread the remaining tablespoon of butter on the top slice of the sandwich. Carefully flip the sandwich and grill the other side for another 3-4 minutes until golden brown and the cheese is fully melted.

Repeat
Remove the first sandwich from the skillet and repeat the grilling process with the second sandwich.
