Stuffed Tomato

Prepare the Filling
In a large bowl, combine the canned tuna or shredded chicken, mayonnaise, finely chopped celery, red onion, salt, black pepper, and lemon juice. Mix well until all ingredients are evenly coated.

Prepare the Tomatoes
Carefully cut the tops off the ripe tomatoes and scoop out the insides using a spoon. Be gentle to avoid breaking the tomato walls.

Stuff the Tomatoes
Fill each tomato with the prepared tuna or chicken salad mixture, packing it in gently.
Potato Salad

Cook the Potatoes
Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and allow to cool.

Combine Ingredients
In a large bowl, mix together the cooled potatoes, mayonnaise, Dijon mustard, chopped hard boiled eggs, salt, black pepper, and paprika. Stir until well combined.
Coleslaw

In a bowl, combine the shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until well mixed.
