Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; some lumps are okay.

Add Strawberries
Fold in the chopped strawberries into the pancake batter.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form.
