Seasoning and Cooking Oil

Method

Preparing the Steak

  1. 1

    Season the Steak

Sprinkle salt and black pepper evenly on both sides of the top sirloin butt steak. Allow it to sit at room temperature for about 15 minutes to enhance flavor.

  2. 2

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  3. 3

    Cook the Steak

Add the seasoned steak to the hot skillet. Cook for about 4-5 minutes on one side, then flip and cook for an additional 3-4 minutes for medium-rare, or until your desired doneness is reached. Use a meat thermometer for precise cooking; 130°F (54°C) is medium-rare.

  4. 4

    Rest the Steak

Once cooked, transfer the steak to a plate and cover loosely with foil. Let it rest for 5-10 minutes before slicing.

Cooking the Eggs

  1. 5

    Heat a Separate Pan

In another small skillet, heat a little olive oil or butter over medium heat.

  2. 6

    Fry the Eggs

Crack the eggs into the skillet carefully. Cook for about 2-3 minutes until the whites are set but the yolks remain runny. For over-easy eggs, gently flip and cook for an additional minute.

Serving

  1. 7

    Plate the Dish

Slice the rested steak against the grain into strips. Arrange the steak on a plate and top with the fried eggs. Serve immediately.
