Sauté the Onion and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

Combine Filling Ingredients
In a large bowl, combine the sautéed spinach mixture with crumbled feta cheese, beaten eggs, salt, black pepper, and dill. Mix well until all ingredients are evenly combined.

Prepare Phyllo Dough
Preheat your oven to 180°C (350°F). Unroll the phyllo dough and keep it covered with a damp kitchen towel to prevent it from drying out.

Fill and Fold
Place a portion of the spinach and feta filling along one edge of the phyllo sheets. Fold the sides over and roll the phyllo tightly to form a log. Place seam side down on a baking sheet.

Bake Spanakopita
Bake in the preheated oven for 30-40 minutes, or until the phyllo is golden brown and crispy.

Let the spanakopita cool slightly before slicing. Serve warm alongside cottage cheese and fresh peach slices.
