Filling Preparation

    Sauté the Onion and Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Cook the Spinach

    Add the chopped spinach to the skillet. Cook until the spinach is wilted and most of the moisture has evaporated, about 5-7 minutes. Remove from heat and allow to cool slightly.

    Combine Filling Ingredients

    In a large bowl, combine the sautéed spinach mixture with crumbled feta cheese, beaten eggs, salt, black pepper, and dill. Mix well until all ingredients are evenly combined.

Assembling Spanakopita

    Prepare Phyllo Dough

    Preheat your oven to 180°C (350°F). Unroll the phyllo dough and keep it covered with a damp kitchen towel to prevent it from drying out.

    Layer Phyllo Sheets

    Take one sheet of phyllo dough and brush it with melted butter. Place another sheet on top and brush again with butter. Repeat this process until you have 6-8 layers.

    Fill and Fold

    Place a portion of the spinach and feta filling along one edge of the phyllo sheets. Fold the sides over and roll the phyllo tightly to form a log. Place seam side down on a baking sheet.

    Repeat the Process

    Continue layering, buttering, and filling the phyllo dough until all the filling is used. Brush the tops of the rolled spanakopita with any remaining melted butter.

Baking

    Bake Spanakopita

    Bake in the preheated oven for 30-40 minutes, or until the phyllo is golden brown and crispy.

Serving

    Serve with Cottage Cheese and Peaches

    Let the spanakopita cool slightly before slicing. Serve warm alongside cottage cheese and fresh peach slices.
