Method

Cooking the Pasta

  1. 1

    Boil Water

In a large pot, bring salted water to a boil over high heat.

  2. 2

    Cook Spaghetti

Add spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining the pasta, reserve about 1 cup of the pasta cooking water.

  4. 4

    Drain Pasta

Once cooked, drain the spaghetti and set it aside, but keep it warm.

Preparing the Sauce

  1. 5

    Cook Bacon

In a large skillet over medium heat, add the bacon or pancetta. Cook until crispy, about 5-7 minutes.

  2. 6

    Prepare Egg Mixture

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

  1. 7

    Combine Pasta and Bacon

Add the drained spaghetti to the skillet with the bacon. Toss to combine and heat through.

  2. 8

    Add Egg Mixture

Remove the skillet from heat. Quickly pour the egg mixture over the spaghetti, tossing rapidly to coat the pasta without scrambling the eggs. Add reserved pasta water a little at a time until reaching desired creaminess.

  3. 9

    Serve

Serve immediately with extra grated Parmesan cheese and black pepper on top.
