Preparing the Pancakes

    In a mixing bowl, combine the pancake mix and water. Stir until just combined; do not over-mix. The batter should be slightly lumpy.

    Heat the Griddle

    Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of cooking oil. Allow it to heat until shimmering.

    Cook the Pancakes

    Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side. Repeat until all batter is used.

    In a separate skillet, heat the remaining tablespoon of oil over medium heat. Add the link sausages and cook until browned and cooked through, about 8-10 minutes, turning occasionally.

Assembling the Pigs in a Blanket

    Take one pancake and place a cooked sausage in the center. Roll the pancake around the sausage to fully encase it. Repeat with remaining sausages and pancakes.
