    Cut the Cheese

    Slice the Kefalotyri cheese into 1-inch thick pieces.

    Season the Cheese

    Sprinkle salt, black pepper, and oregano over the cheese slices, ensuring they are well coated.

    Coat with Flour

    Place the seasoned cheese slices into a shallow dish and dredge in flour, making sure each piece is fully coated.

Cooking

    Heat the Oil

    In a skillet, heat the olive oil over medium-high heat until it’s hot but not smoking.

    Fry the Cheese

    Carefully place the flour-coated cheese slices into the hot oil. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy.

    Flambé the Cheese

    Once fried, carefully pour the Metaxa or Ouzo over the cheese slices and immediately ignite it with a long lighter or match. Allow the flames to subside.

Serving

    Plate the Dish

    Transfer the flaming cheese to a serving plate, garnishing with chopped parsley and lemon wedges.
