    Prepare the Ingredients

    Chop the thick cut smoked ham into small, bite-sized pieces. If using, chop the bell pepper and onion as well.

    Beat the Eggs

    In a mixing bowl, crack the eggs and add salt and black pepper. Whisk the eggs until the yolks and whites are fully combined and slightly frothy.

Cooking

    Heat the Pan

    In a non-stick skillet, melt the butter over medium heat until it is fully melted and begins to bubble.

    Cook the Ham

    Add the chopped smoked ham (and optional bell pepper and onion if using) to the skillet. Sauté for 2-3 minutes until the ham is slightly browned and the vegetables are tender.

    Add the Eggs

    Pour the beaten eggs over the ham mixture in the skillet. Let it cook undisturbed for about 2 minutes until the edges begin to set.

    Add Cheese

    Sprinkle the grated cheddar cheese evenly over the top of the omelet. Cover the skillet with a lid and let it cook for an additional 2-3 minutes, or until the cheese is melted and the eggs are fully cooked.

    Fold and Serve

    Using a spatula, gently fold the omelet in half. Slide it onto a plate and serve immediately.
