Preparing Gyro Meat

    Mix the Meat

    In a large bowl, combine the ground lamb and ground beef. Add minced garlic, dried oregano, ground cumin, salt, black pepper, and olive oil. Mix well until all ingredients are fully combined.

    Shape and Cook

    Shape the meat mixture into a loaf or patty. Preheat your oven to 350°F (175°C) and place the meat on a baking sheet. Bake for 40-45 minutes or until the internal temperature reaches 160°F (70°C).

    Slice the Meat

    Once cooked, allow the meat to rest for 10 minutes, then thinly slice it against the grain.

Making Tzatziki Sauce

    Combine Ingredients

    In a medium bowl, mix Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper. Stir until well combined.

    Cover and refrigerate the tzatziki sauce for at least 30 minutes to allow the flavors to meld.

Assembling the Sandwich

    Warm the Pita

    Lightly warm the pita bread in a dry skillet over medium heat for about 1 minute on each side or until soft.

    Build the Sandwich

    Place a generous portion of sliced gyro meat in the center of each pita. Top with sliced tomatoes, thinly sliced red onions, and a dollop of tzatziki sauce.

    Sprinkle chopped parsley over the top for added flavor and freshness.
