Roast Beef Preparation

Season the Beef
Preheat your oven to 325°F (165°C). In a small bowl, mix together salt, black pepper, garlic powder, and onion powder. Rub the beef roast with olive oil and then coat it with the spice mixture evenly.

Roast the Beef
Place the seasoned beef roast in a roasting pan and cook in the preheated oven for about 1.5 to 2 hours or until the internal temperature reaches 135°F (57°C) for medium rare.

Rest the Beef
Once cooked, remove the roast from the oven and let it rest for at least 20 minutes before slicing. This helps retain the juices.

Slice the Bread and Beef
While the au jus is simmering, slice the French bread into sandwich-sized pieces. Once the beef has rested, slice it thinly against the grain.

Assemble the Sandwich
Lay slices of the roast beef on the bottom half of the French bread. Top with provolone or Swiss cheese. Place the sandwich under the broiler for 2-3 minutes until the cheese is melted and bubbly.

Serve
Sprinkle the sandwiches with chopped parsley, replace the top half of the bread, and serve with a cup of au jus for dipping.
