    Prepare the Vegetables

    Dice the bell pepper and onion into small pieces. Set aside.

    Prepare the Ham

    Dice the ham into small cubes and set aside.

    Beat the Eggs

    In a mixing bowl, crack the eggs and beat them with salt and black pepper until well combined.

Cooking

    Sauté the Vegetables

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the diced bell pepper and onion, and sauté for about 3-4 minutes until they are softened.

    Add the Ham

    Add the diced ham to the skillet with the vegetables and cook for an additional 2-3 minutes until the ham is heated through.

    Cook the Eggs

    Push the sautéed mixture to one side of the skillet, and add the remaining tablespoon of olive oil or butter to the other side. Pour the beaten eggs into the skillet, allowing them to spread evenly.

    Add Cheese

    As the eggs start to set, add the American cheese on top of the egg mixture. Allow it to melt slightly.

    Fold the Omelet

    Once the eggs are mostly set but still slightly runny on top, gently fold the omelet in half using a spatula. Cook for an additional minute to allow the inside to finish cooking.

    Serve

    Carefully slide the omelet onto a plate. Cut in half if desired, and serve immediately.
