Preparing the Chicken

Season the Chicken
Preheat your broiler to high. Rinse the chicken under cold water and pat dry with paper towels. Season the chicken evenly inside and out with salt and black pepper.

Prepare Lemon Butter Oregano Sauce
In a small saucepan, melt the butter over medium heat. Stir in the lemon juice, dried oregano, and garlic powder. Mix well and remove from heat.

Broil the Chicken
Place the chicken on a broiler pan and brush the lemon butter oregano sauce all over the chicken. Broil the chicken for about 20 minutes, then carefully flip it over and broil for another 15-20 minutes, or until the internal temperature reaches 165°F (75°C). Baste with the sauce every 10 minutes for added flavor.

Cook the Rice
Add the long-grain rice to the saucepan and stir for about 2 minutes until the rice is slightly toasted. Pour in the chicken broth and add salt and black pepper. Bring to a boil.

Simmer and Fluff
Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes until the rice is tender and has absorbed the liquid. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.

Garnish
Serve the rice pilaf garnished with chopped parsley.
