    Wash the zucchini thoroughly, then slice them into 1/4 inch thick rounds. Place the sliced zucchini in a bowl and sprinkle with salt. Allow them to sit for about 15-20 minutes to draw out excess moisture.

    In three separate shallow bowls, place the all-purpose flour in the first bowl, beat the eggs in the second bowl, and combine the breadcrumbs, grated Parmesan cheese, black pepper, and garlic powder in the third bowl.

    Coat the Zucchini Slices

    Pat the zucchini slices dry with paper towels. Take each slice and first coat it in the flour, shaking off any excess. Next, dip it in the beaten eggs, and finally, coat it in the breadcrumb mixture. Ensure each slice is well-coated and set aside on a plate.

    In a large frying pan, heat the vegetable oil over medium-high heat until hot but not smoking. You can check if the oil is ready by dropping a small piece of bread into it; it should sizzle.
