Preparation and Cooking

    Prepare the Roasted Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, and wrap it in foil. Roast for about 30-35 minutes until tender.

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion and bell pepper, and sauté until softened, about 5-7 minutes.

    Add Tomato Sauce and Seasonings

    Stir in the roasted garlic (squeezed from the skin), tomato sauce, bay leaf, salt, and black pepper. Bring to a simmer.

    Add Seafood

    Add salmon, mussels, chopped clams, and shrimp to the pot. Cover and cook for about 10-15 minutes, or until the mussels open and shrimp are cooked through.

    Finish the Stew

    Remove bay leaf and stir in fresh parsley. Taste and adjust seasoning if necessary.

    Serve

    Ladle the seafood stew into bowls and serve with toasted bread on the side.
