Marinate the Chicken
In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Coating
In a separate bowl, mix together the all-purpose flour and cornstarch. Set aside.

Coat the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece of chicken in the flour mixture, pressing firmly to adhere.

Fry the Chicken
Carefully place the coated chicken thighs in the hot oil, frying in batches if necessary. Cook for about 6-8 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).

Assemble the Sandwich
Remove the fried chicken from the oil and let it drain on paper towels. Toast the brioche buns if desired. Spread chipotle mayo on the bottom half of each bun, top with fried chicken, add pickles, and then cover with the top half of the bun.
