Prepare the Onions

Slice the onion thinly. In a skillet, heat olive oil over medium heat and add the sliced onions. Cook, stirring occasionally, until the onions are caramelized, about 15-20 minutes. Season with salt and pepper.

Cook the Ribeye Steak

Season the ribeye steak with salt and black pepper. In a separate skillet or grill pan, heat over high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or to your preferred doneness. Remove from the heat and let it rest for 5 minutes.

Assemble the Sandwich

Slice the ribeye steak against the grain into thin slices. Place the bottom half of the hoagie bun on a plate. Layer the sliced steak, caramelized onions, and provolone cheese on the bun. Top with the other half of the hoagie bun.

Add the Chipotle Aioli

Spread chipotle aioli generously on the inside of both halves of the hoagie bun before closing the sandwich.

Serve

Cut the sandwich in half if desired and serve immediately.
