    Cook Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.

    Prepare Salmon

    Preheat oven to 375°F (190°C). Season salmon filets with salt and pepper. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked through and flaky.

    Chop Vegetables

    While the salmon is baking, halve the cherry tomatoes and slice the cucumber. Set aside.

    Make Vinaigrette

    In a small bowl, whisk together 3 tablespoons of honey, the juice of 1 lime, salt, and pepper to taste. Adjust sweetness and acidity according to preference.

    Assemble Salad

    In a large bowl, combine mixed greens, quinoa, cherry tomatoes, and cucumbers. Flake the cooked salmon and add it to the salad. Drizzle with honey-lime vinaigrette and toss gently to combine.
