Prepare the Balsamic Glaze
In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat, then reduce the heat to low and let it cook until it thickens, about 10-15 minutes. Set aside to cool.

Prepare the Dates
Preheat your oven to 400°F (200°C). Slice each Medjool date lengthwise to create a pocket and remove the pit. Stuff each date with about 1 teaspoon of cream cheese.

Wrap with Bacon
Take a slice of bacon and wrap it around each stuffed date, securing it with a toothpick if necessary. Place the wrapped dates on a baking sheet lined with parchment paper.

Bake the Dates
Bake the wrapped dates in the preheated oven for 15-20 minutes, or until the bacon is crispy and golden brown.

Glaze and Serve
Remove the dates from the oven and drizzle the balsamic glaze over them. Sprinkle with black pepper and salt to taste. Serve warm.
