Prepare the Cod
Start by patting the cod fillets dry with paper towels. Season both sides with salt and black pepper.

Set Up Breading Station
In three shallow dishes, place the flour in one, beaten eggs in the second, and bread crumbs in the third.

Bread the Cod
Dredge each cod fillet in the flour, shaking off excess. Dip into the beaten eggs, then coat with bread crumbs, pressing gently to adhere.

Fry the Cod
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded cod fillets and cook for about 3-4 minutes per side until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the burger buns if desired. Place a lettuce leaf on the bottom half of each bun, add a breaded cod fillet, top with a slice of tomato, pickles, and a generous dollop of tartar sauce. Finish with the top half of the bun.

Serve the sandwiches immediately while hot, with extra tartar sauce on the side if desired.
