    Prepare the Tenderloin

    Trim the pork tenderloin of any excess fat and slice into 1-inch thick medallions.

    Set Up Breading Station

    In three separate bowls, place flour mixed with salt, pepper, and garlic powder in one; beaten eggs in the second; and breadcrumbs in the third.

    Bread the Tenderloin

    Dip each medallion first into the flour, then the egg, and finally coat with breadcrumbs. Ensure each piece is evenly coated.

    Cook the Tenderloin

    In a large skillet, heat olive oil over medium heat. Once hot, add the breaded tenderloin pieces in batches. Cook for about 3-4 minutes on each side or until golden brown and cooked through.

    Assemble the Sandwich

    Place cooked tenderloin on the bottom half of a hamburger bun. Drizzle with honey mustard and top with fresh greens. Cover with the top half of the bun.
