Prepare the patties
In a mixing bowl, combine ground beef, salt, and black pepper. Form the mixture into two equal-sized patties.

Cook the patties
Heat olive oil in a skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side until browned. Flip the patties and place a slice of Swiss cheese on top. Cook for an additional 3-4 minutes or until the cheese is melted and the patties are cooked to your desired doneness.

Heat the corned beef
In a separate pan, warm the corned beef brisket until heated through.

Assemble the burgers
On the bottom half of each burger bun, layer the cooked beef patty with melted cheese, followed by a portion of the warmed corned beef, a generous helping of sauerkraut, and a drizzle of Thousand Island dressing. Top with the other half of the bun.
