    Slow Cook the Corned Beef

    Place the corned beef brisket in a slow cooker. Add enough water to cover the brisket and season with spices included in the corned beef package. Cook on low for 8-10 hours or until tender. Once done, remove from the slow cooker and let it rest before slicing.

    Prepare the Sandwich

    Spread Dijon mustard on one side of each slice of marble rye. Layer the sandwich with sliced corned beef, sauerkraut, Swiss cheese, and a drizzle of Thousand Island dressing. Top with another slice of marble rye.

    Grill the Sandwich

    Heat a skillet or griddle over medium heat. Melt 1 tablespoon of butter in the skillet. Add the prepared sandwiches and grill until the bread is golden brown and the cheese has melted, about 3-4 minutes per side. Add more butter as needed.

    Serve

    Remove the sandwiches from the skillet, slice in half, and serve hot with additional Thousand Island dressing on the side for dipping.
