Prepare the steak
Season the sirloin steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side or until cooked to your preferred doneness. Remove from skillet and let rest for a few minutes before slicing thinly.

Sauté the vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced onions, bell peppers, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized.

Assemble the sandwiches
Preheat your oven to 350°F (175°C). Slice the sub rolls in half and place them on a baking sheet. Fill each roll with the steak and vegetable mixture. Top with shredded mozzarella cheese.

Toast the sandwiches
Bake the sandwiches in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly. Remove from the oven and serve hot.
