Method

Prepare the Herb Garlic Butter

  1. 1

    Mix the Ingredients

In a bowl, combine the softened butter, parsley, dill, minced garlic, lemon juice, salt, and pepper. Mix well until all ingredients are incorporated.

  2. 2

    Chill

Transfer the herb garlic butter to a piece of plastic wrap, shape it into a log, and refrigerate until firm.

Cook the Rice Pilaf

  1. 3

    Sauté the Onion

In a saucepan, melt butter over medium heat. Add chopped onion and sauté until translucent.

  2. 4

    Add Rice and Broth

Stir in the rice, cook for 1-2 minutes, then add broth and salt. Bring to a boil.

  3. 5

    Simmer

Reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is cooked and liquid is absorbed.

Grill the Salmon

  1. 6

    Prepare the Grill

Preheat the grill to medium-high heat and lightly oil the grates.

  2. 7

    Season the Salmon

Brush salmon fillets with olive oil, and season with salt and pepper.

  3. 8

    Grill

Place the salmon on the grill skin-side down. Grill for about 4-6 minutes on each side or until cooked through and flakey.

  4. 9

    Serve

Top each fillet with a slice of herb garlic butter and serve with lemon wedges.

Steam the Broccoli

  1. 10

    Prepare the Broccoli

Place the broccoli florets in a steamer basket over boiling water. Cover and steam for about 5-7 minutes or until bright green and tender.

  2. 11

    Season

Remove from heat and season with salt to taste.
