Prepare the batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the ice-cold water, stirring until smooth.

Heat the oil
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Batter and fry the haddock
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil, frying in batches until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Assemble the sandwich
On each burger bun, layer lettuce, a fried haddock fillet, tomato slices, red onion, and a generous spread of tartar sauce. Squeeze fresh lemon juice over the top before closing the sandwich.

Serve immediately with extra lemon wedges on the side.
