Cheesecake Filling

Method

Preparation

  1. 1

    Prepare the crust

Preheat the oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool.

  2. 2

    Make the filling

In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the melted white chocolate and vanilla extract, mixing until well combined. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Finally, add the heavy cream and mix until smooth.

  3. 3

    Combine and bake

Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes or until the center is set and slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

  4. 4

    Chill and serve

Remove the cheesecake from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving. Carefully remove the springform pan and slice to serve.
