Method

Preparing the Grillades

1

Sear the Meat

Season the beef with salt and pepper, then dredge in flour. In a large skillet, heat olive oil over medium-high heat and sear the beef until browned on both sides. Remove and set aside.

2

Sauté Vegetables

In the same skillet, add chopped onion, green bell pepper, celery, and garlic. Sauté until softened, about 5 minutes.

3

Simmer

Add diced tomatoes, beef broth, bay leaves, and Worcestershire sauce to the skillet. Return the beef to the skillet, bring to a simmer, cover, and cook on low heat for 1.5 to 2 hours until the meat is tender. Adjust seasoning with hot sauce.

Making the Grits

4

Cook the Grits

In a large pot, bring water to a boil. Slowly stir in the corn grits and salt. Reduce heat and simmer, stirring occasionally, for about 20-25 minutes until thickened.

5

Finish the Grits

Stir in milk, butter, and shredded cheddar cheese. Cook for an additional 5 minutes until creamy.

Serving

6

Plating

Serve the grits in bowls topped with the grillades and sauce. Enjoy!
