Prepare the Potatoes

Roast the New Potatoes

Preheat the oven to 200°C (400°F). Wash and halve the new potatoes. In a bowl, toss the potatoes with olive oil, rosemary, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes or until golden and tender.

Prepare the Asparagus

Steam the Asparagus

While the potatoes are roasting, prepare the asparagus. Trim the ends of the asparagus and steam them for about 5-7 minutes until bright green and tender. Toss with butter and salt before serving.

Cook the Trout

Pan-Fry the Trout

In a large skillet over medium heat, melt the butter and add olive oil. Season the trout fillets with lemon juice, salt, and pepper. Place the fillets skin-side down in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.

Add Almonds

In the last minute of cooking, sprinkle the sliced almonds over the trout, allowing them to toast slightly in the pan.

Serve

Plate the Dish

Arrange the roasted new potatoes, steamed asparagus, and pan-fried trout on a plate. Garnish with additional almonds if desired and serve immediately.
