Prepare the Duck
Season the duck breasts with salt and black pepper on both sides.
Sear the Duck
In a large skillet, heat olive oil over medium-high heat. Add the duck breasts, skin-side down, and sear until the skin is crispy and browned, about 6-8 minutes. Flip and cook for another 3-5 minutes until medium-rare or desired doneness. Remove from the skillet and let rest.
Make the Orange Sauce
In the same skillet, add the juice of the fresh oranges, orange juice, honey, soy sauce, and thyme. Stir well and bring to a simmer, scraping any browned bits from the bottom of the pan. Reduce the sauce until slightly thickened, about 5-7 minutes.
Serve
Slice the duck breasts and arrange on plates. Drizzle the orange sauce over the duck and garnish with orange slices and fresh thyme if desired.
