In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add equal parts flour and oil (about 1/2 cup each) to make a roux. Stir continuously for about 20-30 minutes until it turns a deep brown color.

Add the chopped onion, green bell pepper, celery, and minced garlic to the roux. Stir and cook until the vegetables are tender, about 5-7 minutes.

Add the sliced Andouille sausage and chicken thighs to the pot. Cook for about 5 minutes until the chicken is browned.

Pour in the chicken broth and diced tomatoes. Add the bay leaves, thyme, cayenne pepper, salt, and black pepper. Stir to combine.
