    Prepare the Peppers

    Preheat your oven to 375°F (190°C). Slice the poblano peppers in half lengthwise and remove the seeds and membranes. Set aside.

    Cook the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until onions are translucent. Remove the casing from the boudin sausage and crumble it into the skillet. Cook until browned and heated through.

    Add Roasted Peppers

    Stir in the roasted red peppers, salt, black pepper, and chopped cilantro (if using) into the sausage mixture. Cook for an additional 2-3 minutes to combine flavors.

    Stuff the Peppers

    Spoon the filling into each halved poblano pepper, packing it in gently. If desired, top each stuffed pepper with shredded cheese.

    Bake

    Place the stuffed peppers onto a baking sheet. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through.
