1. Prepare the Filling
In a medium bowl, combine shrimp, crab meat, cream cheese, green onion, garlic, lemon juice, salt, and black pepper. Mix until well combined.
2. Prepare the Pastry
Preheat the oven to 200°C (400°F). Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 squares.
3. Fill the Pastry
Place a generous tablespoon of the seafood filling in the center of each pastry square. Fold the corners of the pastry over the filling to create a pocket, pressing the edges to seal. Brush the tops with the beaten egg.
4. Bake
Place the stuffed pastries on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown and puffed.
