Prepare the Shrimp
Preheat your oven to 400°F (200°C). In a large bowl, toss the jumbo shrimp with olive oil, paprika, salt, and black pepper until well coated.

Caramelize the Vegetables
In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the diced onions and bell peppers. Cook for about 10 minutes, stirring occasionally, until they become soft and caramelized.

Roast the Shrimp
Spread the shrimp on a baking sheet and roast in the preheated oven for about 8-10 minutes, or until they are pink and opaque.

Prepare the Rice
While the shrimp are roasting, prepare the steamed rice according to package instructions.

Combine and Serve
In a serving dish, layer the steamed rice, top with caramelized onions and peppers, and then add the roasted shrimp. Pour shrimp stock over the top and sprinkle with diced tasso and fresh parsley before serving.
