Duck Breast Preparation

Score and Season
Score the skin of the duck breasts in a crosshatch pattern. Season both sides with salt and black pepper.

Cook Rice
Add the diced sausage and Cajun seasoning. Stir for a couple of minutes, then add the rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

Finish with Green Onions
Remove from heat and stir in sliced green onions before serving.
Candied Sweet Potatoes

Cook Sweet Potatoes
In a pot, combine sweet potatoes, brown sugar, butter, cinnamon, nutmeg, and vanilla. Add a little water if necessary.

Simmer
Cook on medium heat until sweet potatoes are tender and coated in syrup, about 20-25 minutes.
L’Orange Sauce

Prepare Sauce
In a saucepan, combine orange juice, orange zest, sugar, and chicken broth. Bring to a boil.

Thicken Sauce
In a small bowl, mix cornstarch and water. Stir into the sauce and let simmer until thickened.
Assembly

Serve
Slice the duck breasts and serve alongside the Cajun dirty rice and candied sweet potatoes. Drizzle with l’Orange sauce.
