Sauté the Garlic and Mushrooms
In a large skillet, melt the butter over medium heat. Add the chopped garlic and sauté for 1-2 minutes until fragrant. Then add the oyster mushrooms and cook until they are tender, about 5 minutes.

Add Crawfish
Stir in the crawfish and season with salt and black pepper. Cook for another 3-4 minutes until the crawfish is heated through.

Cook the Redfish
In a separate skillet, heat truffle oil over medium-high heat. Season the redfish fillets with salt and pepper. Cook the fillets for about 4-5 minutes per side, or until they are golden brown and cooked through.

Combine and Serve
Plate the cooked redfish and top with the crawfish and mushroom mixture. Garnish with diced green tomatoes and fresh parsley before serving.
