    Prepare the Lentil Puree

    Rinse and cook the lentils in a pot with water until tender, about 20-25 minutes. Drain and blend until smooth. Season with salt and set aside.

    Cook the Sweet Potatoes

    Peel and chop sweet potatoes into cubes. Boil in salted water until tender, about 15-20 minutes. Drain, mash, and add salt and pepper to taste.

    Braised Swiss Chard

    In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent. Add Swiss chard and sauté until wilted. Season with salt and pepper.

    Prepare the Pork Chops

    Season pork chops with salt and pepper. In a pan over medium-high heat, sear pork chops on both sides until golden brown and cooked through, about 4-5 minutes per side.

    Make the Caramel Sauce

    In a saucepan, combine brown sugar and Blanton's Bourbon. Cook over medium heat until the sugar dissolves and the mixture thickens, about 5-7 minutes.

    Plate the Dish

    On each plate, create a base of lentil puree, top with sweet potato mash, and place the pork chop on top. Add braised Swiss chard on the side and drizzle with caramel sauce.
