    Prepare the Rabbit

    Season the rabbit tenderloins with salt and black pepper on both sides.

    Heat the Pan

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

    Cook the Rabbit

    Once the oil is hot, add the rabbit tenderloins to the skillet. Cook for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Make the Lemon Caper Butter

    In the same skillet, reduce the heat to medium and add the butter. Once melted, add the capers, lemon zest, and lemon juice. Stir well to combine and cook for an additional 2 minutes.

    On a plate, arrange the baby arugula. Place the cooked rabbit tenderloins on top and drizzle with the lemon caper butter. Serve immediately.
