Oysters and Breading
Method
Preparation and Cooking
- 1
Prepare the Oysters
In a medium bowl, soak the shucked oysters in buttermilk for at least 30 minutes. This helps to tenderize the oysters and adds flavor.
- 2
Make the Breading
In a shallow dish, mix together the flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper.
- 3
Coat the Oysters
Remove the oysters from the buttermilk, allowing excess to drip off. Dredge each oyster in the flour mixture, coating it evenly.
- 4
Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Oysters
Carefully add the breaded oysters to the hot oil, frying in batches if necessary. Fry for about 2-3 minutes on each side or until golden brown and crispy.
- 6
Drain and Serve
Remove the fried oysters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with crumbled bleu cheese and white remoulade.
