    Prepare the Asparagus

    Trim the ends of the asparagus and blanch them in boiling salted water for about 2-3 minutes until tender but still crisp. Drain and set aside.

    Cook the Lamb Filet

    Season the lamb filets with salt and black pepper. Heat a skillet over medium-high heat with a little oil and sear the lamb for about 4-5 minutes on each side for medium-rare. Remove from the skillet and let it rest.

    Prepare the Tasso Hollandaise

    In a saucepan, melt the unsalted butter over low heat. In a separate bowl, whisk together the egg yolks and lemon juice until pale. Gradually add the melted butter while whisking continuously until the sauce thickens. Stir in the diced tasso ham and season with salt and pepper.

    Assemble the Dish

    Slice the rested lamb filets thinly and arrange them on plates. Top each slice with crab meat and drizzle with the tasso hollandaise. Serve with the blanched asparagus on the side.
