Preparation and Serving
Make the Ice Cream Base
In a mixing bowl, combine heavy cream, whole milk, granulated sugar, and vanilla extract. Whisk until the sugar is fully dissolved.
Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until thoroughly chilled.
Churn the Ice Cream
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft serve consistency.
Add Cherries
Fold in the pitted dark sweet cherries into the ice cream. Transfer the mixture to a lidded container and freeze for at least 4 hours or until firm.
Flambé the Cherries
To serve, heat the brandy in a small saucepan until warm. Pour it over a serving of ice cream topped with cherries, and carefully ignite the brandy with a long lighter. Allow the flames to subside before serving.
Garnish
Optionally, top with chocolate shavings before serving.
