    Prepare the Pork Chops

    Season the double cut pork chops with salt, black pepper, and thyme. Preheat the grill to medium-high heat.

    Grill the Pork Chops

    Grill the pork chops for about 5-7 minutes per side or until they reach an internal temperature of 145°F (63°C). Let them rest for a few minutes before serving.

    Make the Cauliflower Purée

    Chop the cauliflower into florets and steam or boil until tender. Drain and blend with butter, olive oil, salt, and pepper until smooth. Set aside.

    Glaze the Carrots

    Peel and cut the carrots into sticks. In a pan, add the honey and a splash of water. Add the carrots and cook over medium heat until they are tender and glazed, about 10 minutes.

    Prepare the Veal Reduction

    In a saucepan, cook the bacon until crispy. Remove the bacon and add the red wine and veal stock to the pan. Simmer until reduced by half. Adjust seasoning as needed.

    On each plate, spread a layer of cauliflower purée, place the grilled pork chop on top, add the glazed carrots on the side, and drizzle with the bacon and red wine veal reduction.
