    Grilling the Sausages

    Preheat the grill to medium-high heat. Brush the alligator sausages lightly with olive oil and season with salt and black pepper. Grill the sausages for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks. Remove from the grill and let rest.

    Caramelizing the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Stir in the sherry vinegar and cook for an additional 2 minutes. Remove from heat and set aside.

    Making the Cream Reduction

    In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Stir in the heavy cream and Creole mustard, and bring to a gentle simmer. Allow the cream to reduce for about 5-7 minutes, stirring frequently, until it thickens slightly. Season with salt and black pepper to taste.

    Slice the grilled alligator sausages and serve them topped with the caramelized onions and drizzled with the sherry Creole mustard cream reduction. Garnish with chopped fresh parsley.
