    Prepare the Oysters

    Shuck the oysters and place them on a tray lined with paper towels to drain excess liquid.

    Cook the Sausage

    In a skillet, cook the andouille sausage over medium heat until crispy. Remove from heat and let it cool before crumbling.

    Make the Batter

    In a bowl, whisk together the flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, beat the eggs and milk together.

    Coat the Oysters

    Dip each oyster in the egg mixture, then dredge in the flour mixture, ensuring they are fully coated.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Oysters

    Carefully add the coated oysters to the hot oil in batches and fry until golden brown and crispy, about 2-3 minutes per side.

    Remove the oysters from the oil and place them on a plate lined with paper towels to drain excess oil. Top with crumbled bleu cheese and serve with remoulade sauce on the side.
