Method
Fried Green Tomatoes Preparation

Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let sit for 10 minutes to draw out moisture.

Dredge the Tomatoes
Set up a dredging station with three bowls: one with flour, one with buttermilk, and one with cornmeal mixed with pepper. Dip each tomato slice first in flour, then in buttermilk, and finally coat with cornmeal.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium-high heat. Fry the coated tomato slices for 3-4 minutes on each side or until golden brown. Drain on paper towels.
Shrimp Remoulade Preparation

Mix Ingredients
In a bowl, combine cooked shrimp, mayonnaise, Dijon mustard, lemon juice, hot sauce, paprika, and chopped green onions. Mix well and refrigerate until ready to serve.
Crabmeat Ravigote Preparation

Combine Ingredients
In another bowl, combine crabmeat, mayonnaise, Dijon mustard, lemon juice, parsley, salt, and pepper. Mix gently and refrigerate until ready to serve.
Assembly

Serve
On a serving plate, stack the fried green tomatoes and top each with a spoonful of shrimp remoulade and crabmeat ravigote. Serve immediately.
