Prepare the Carrots
Peel and spiralize the heirloom carrots into spaghetti-like strands. Set aside.

Cook the Spaghetti
In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.

Sauté Shallots and Haricots Verts
In a large skillet over medium heat, add olive oil. Once hot, add chopped shallots and sauté until translucent. Add haricots verts and cook for about 5 minutes until tender-crisp.

Make the Cabernet Butter
In a saucepan, combine the Cabernet Sauvignon and bring to a simmer. Reduce by half. Remove from heat and whisk in the unsalted butter until melted and smooth. Season with salt and pepper.

Plate the drunken rabbit mixture, garnish with fresh parsley, and enjoy!
