    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Stir in the minced garlic and sliced Andouille sausage. Cook for an additional 2-3 minutes until fragrant.

    Cook the Chicken

    Add the diced chicken to the pot and cook until it's browned on all sides.

    Add Shrimp and Tomatoes

    Mix in the shrimp and canned diced tomatoes, stirring everything together.

    Add the chicken broth, long-grain rice, Cajun seasoning, bay leaves, salt, and black pepper. Stir well to combine.

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.
