Preparation

    Sauté the Vegetables

    In a large pot over medium heat, add a splash of oil and sauté the onion, bell peppers, and celery until softened, about 5-7 minutes.

    Add Garlic and Sausage

    Stir in minced garlic and sliced Andouille sausage, cooking for an additional 3-4 minutes until fragrant.

    Brown the Chicken

    Push the vegetables to the side and add the chicken thighs to the pot. Brown them on both sides for about 5 minutes each.

    Combine Ingredients

    Add the canned diced tomatoes, chicken broth, bay leaves, Cajun seasoning, salt, and black pepper. Stir everything together.

    Simmer

    Bring the mixture to a boil, then reduce to a simmer. Cover and let it cook for about 30-35 minutes, or until chicken is cooked through.

Rice Preparation

    Cook the Rice

    In a separate pot, bring water to a boil. Add the long-grain white rice, cover, and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and the water has absorbed.

Serving

    Serve the Dish

    Remove bay leaves from the pot. Serve the Creole dish over a bed of rice, garnished with chopped parsley.
