    Prepare the Ingredients

    Wash and scrub the fingerling potatoes. Cut them in half lengthwise. Slice the green onions and mince the garlic.

    Cook the Potatoes

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the fingerling potatoes cut-side down and season with salt and black pepper. Cook for 10-12 minutes until golden brown and tender, stirring occasionally.

    Add the Aromatics

    Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant. Be careful not to burn the garlic.

    Incorporate the Corn and Tomatoes

    Add the roasted corn and grape tomatoes to the skillet. Stir well and cook for another 5 minutes until the tomatoes start to soften.

    Finish with Crawfish and Brown Butter

    Add the crawfish to the skillet. In a separate small pan, melt the remaining 2 tablespoons of butter until it turns brown. Pour the brown butter over the hash and toss to combine. Adjust seasoning as needed.

    Garnish the hash with sliced green onions and serve warm.
