    Prepare the Alligator

    Rinse the alligator fillets under cold water and pat dry with paper towels.

    Season the Fillets

    In a small bowl, combine the Cajun seasoning, garlic powder, onion powder, paprika, black pepper, and salt. Rub this spice mixture generously over both sides of the alligator fillets.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Alligator

    Add the seasoned alligator fillets to the skillet. Cook for about 3-4 minutes on each side, or until the outside is blackened and the meat is cooked through (internal temperature should reach 145°F).

    Serve

    Remove the fillets from the skillet and let them rest for a couple of minutes before slicing. Serve with white remoulade on the side.
